Oy! What an overwhelming topic this can be. If you’ve ever been anywhere near a restaurant improvement project, you’ll surely agree. Even if it makes our hair stand on end, we must talk about it.

And the elephant in the room is… well, one of them anyway…the owner or founder may not see the big picture of what needs to be done. Of course, no one knows a restaurant better than they do, but it is truly a rare thing for the owner to clearly see the problem. It’s nearly impossible to see things objectively while 70-80 hours a week is consumed by endless minute details that go hand in hand with running a restaurant. No big secret, but one heck of a big deal. It is extraordinarily difficult to see what direction or improvement is needed, so getting the initial direction is the hardest part.  Once the direction is decided, it becomes a simpler matter of devising the plan and executing it.

Restaurant improvement projects add hundreds of details and require a significant effort to create change because, in the restaurant business, it is all about the details. There are many moving parts in the restaurant business and a lot of details to manage. Your failure or success is based upon the attention and delivery on details.
