So what’s up with the term ‘menu mix’? Well it’s a funny lil thing but it is valuable and can serve to make money.

A menu mix is a menu that has a balanced and strategic developed so that you have varying and attractive profit margins across the menu.
An example of this is having a low cost item and a high cost item sold at a close difference in sales price to the customer. A low cost item would be a chicken entrée coupled with a high cost item like lobster. You won’t make a lot of money on lobster but it will attract customers who come with those that prefer chicken where you will make money. Thereby a menu mix is worth it to you as a business owner.
